Hi, Jeremy! This will depend on the recipe that you're hoping to bake. A couple of days before baking, you'll want to add together the amount of starter in your recipe plus the amount of starter you prefer to keep on hand. This makes the total weight you're hoping to build up your starter to reach. Then you'll feed without discarding until you reach that weight. We hope this helps!
