I have been feeding my starter for 5 weeks now. It has been fed a mix of spelt and whole wheat, depending on what I could find at the store. I keep it in the oven, off, with the light on. It has been doubling in volume, it smells wonderful, it's bubbly...but it will not for the life of me pass the "float test". What am I doing wrong? Do I need to start over? Do I just go ahead and bake with it? Help!
