Yes, you may store it in the frig if you are not a frequent baker (every day or every other day). It is Ok that is does not double in size every time. If you neglect your starter for a long period of time, the liquid increases. Try it sometime and you will see. Just stir it back in for a more tangy flavor or pour it off for a more mild flavor.
