Kevin, 3 cups is a lot of starter for a bread recipe! Is it making several loaves at once? Since you're not going to be able to bake with your starter for a couple of weeks anyway, you'll be better off making a normal-sized starter, then once it's fully doubling in volume, you can bulk it up by feeding without discarding for several feedings until you have the amount of starter needed for your recipe, plus the amount you want to keep in reserve to keep your starter going.
