How great that you have an active starter, Shoshana! We wouldn't skip ahead, because most starters see a slump in activity after a few days. The yeasts in your starter are clearly very happy already, but that doesn't mean that the helpful bacteria are as well. It takes a while for them to reach a nice equilibrium.
