I use potato water, saved and cooled, after cooking unpeeled Yukon Gold or Red Potatoes, for my starter. I started it at least two years ago and have never discarded any of it. I feed it, use it for my rolls, feed it again and refrigerate until needed again. What is the reason for discarding? I never have too much.
