used this method when starting with SD a few years ago---worked great--have had a vigorous starter for years--- found that a starter is extremely forgiving of neglect--months of no attention in back of fridge and a couple feedings(by weight) and its ready to go--maybe 2T go back in fridge until feel like baking with SD again---haven't discarded any since starting this journey--have dried and shared lots too--glad that my favorite 'bulk' store always has a supply of KA flours--even these days
