Hi, Pao! You can use less, but a larger starter is easier to keep track of, and will be simpler to bake with once you're ready for it. When your starter is fully mature, you can keep it in the fridge and feed it once a week, but when your starter is new, you'll need to leave it out at room temperature for the first couple of weeks.
