I used these instructions to start my started about seven months ago, and it took twelve days before it doubled, and then fell. I fed it with King Arthur whole wheat flour for the first three days. It's been a vigorous starter, and I've been very pleased with the success I've had making my bread with this starter alone--without added yeast. Thank you, thank you P. J. Hammel for your detailed instructions--and thanks to King Arthur's staff of bakers who are expert "troubleshooters" and able to help you get out of worrysome situations when things go wrong with your fledgling starter.
