Hi, Andrew! Feel free to stick with whole wheat flour, if that's what you've got on hand. We chose to make our recipe switch over to all-purpose flour mostly because in normal times, that's the most accessible and cost-effective type of flour for the majority of people. But whole wheat starters are lovely!
