Hi, Michael! You might want to try giving your starter a couple of feedings with whole wheat or rye flour. Sometimes the extra nutritional boost is just what a new starter needs to push it over the edge into fully maturing. If that doesn't work (or you don't have access to any), then reaching out to our Baker's Hotline so we can help you troubleshoot in more detail would be a good choice. Happy baking!
