Hi, Brad! Before you bake a recipe like this, you'll want to build up (sometimes called bulking) your starter. Keeping your starter out on the countertop, you'll feed it the usual amount twice a day, but without discarding. You'll continue to do this until your starter contains the amount you want to use in your recipe PLUS the amount you want to keep as your starter. Once you've got that, you're ready to bake!
