Hi, Anna! Feel free to use your sprouted wheat flour. If you find that your starter is becoming dryer than expected (because sprouted wheat flour absorbs a lot of liquid), just add a bit more water to your starter when you feed it, until it looks to be about the consistency of pancake batter.
