Hi, John! You can definitely do that! You may find that, if you're feeding your starter white whole wheat in place of all-purpose flour, you'll need to use a bit more liquid with each feeding to keep it at a consistency resembling pancake batter. This is just because whole wheat flour absorbs more liquid than all-purpose does. But other than that, you're ready to go!
