Hi, Katie! You're looking for a consistency that's similar to pancake batter. If your starter is very thick, don't panic! (Many bakers actually prefer a "stiff" or dry starter.) Just add a bit more water until it looks right. If you're measuring your ingredients by volume, you might be getting a very stiff starter due to too much flour finding its way into your measuring cups.
