Hi there! Starters are a lot like children: they grow up when they're ready, and not when we're ready for them to do so! As with any living thing, there's a fair bit of variation from one starter to the next. A cooler temperature might slow your starter down for a bit, but just keep feeding it regularly! You might also consider giving it a few feedings of whole wheat or rye flour, which can sometimes give a new starter the nutritional boost it needs to grow into its full, bubbly self. Happy baking!
