For those struggling to get a starter going, I found my house just wasn't warm enough so I found a workaround! After about 7 days my starter was still barely active. I figured my house temp was to blame and I ended up putting a heating pad on my kitchen counter set to low, then a hand towel on top. I placed my starter on the hand towel and pulled the sides up like a little cozy jacket. I ended up wrapping a tea towel around the whole thing as well. I did this for 4-5 more days and got the desired results! To make sure my starter was doubling I used a rubber band around the jar - this made it super easy to tell the increase in volume. The starter has been fantastic to use! I have used discard to make cast iron pizza crust (twice!), cinnamon raisin swirl bread, and a French loaf! I didn't realize how much flour this would use and how much discard I would accumulate but it has been worth the results! Looking forward to a long relationship with my starter!
