I think many of us are starting projects like this during these very difficult time.I am a week into my starter and like yours it is not very foamy.I was thinking of using more whole wheat the next time I fed tonight.Your comment makes me think that is a good idea. I am out of AP flour and need to shop (doing that as infrequently as I can) and AP flour was hard to find last week. I will post my results when it starts to improve!!
