I have been making my starter (first time) for about two weeks and one day. It is finally foamy on top and is looking really different. A few days ago, I fed it Pumpernickel flour, hoping to create change. Anyway, I believe that tomorrow it will be ready to use. I am going to feed it for the last time shortly and will mark the jar to confirm its growth. I think what made a difference for me was putting it on a small towel (the counter surfaces are cold) and moving it to the stovetop, where there is more warmth. After many days without seeing a change in the starter, this made all the difference. I am looking forward to trying out some of your discard and sourdough bread recipes next!
