Just want to make sure I am doing nothing wrong. Live in Los Angeles but using water from a Britta filter. House is around 65-72 at this time of year. Using Gold Metal flour. It has been 10 days of pouring 113g of starter into a bowl and adding the same amount of water and flour. The first 3-4 days it seemed to be more active. Now it has a few surface bubbles and after 12 hours, it might be 1/8" above where it was when I first put it in the glass jar I am using. I leave the lid loose on the jar so it is getting air. Do I just keep feeding? Been using a lot of recipes for "discard" ;-). BTW, love the clarity of your site. Michael
