I am in the 6th day of trying to make a new starter. I have access to a proofing box and I keep the starter at 75 deg (F). After day 1 it had almost doubled, so it looked ok. Now, after almost a week of 2/day feedings, there is virtually no activity. No bubbles. No rise. Is it dead? Should I continue with 2/day feedings or just throw it out and start over?
I am using a mix of 70% KA unbleached AP flour and 30% dark rye, and bottled water (Crystal Geyser).
