My starter has not reached where it needs to be yet. I think it needs more time, but I have plans to leave and won't be able to feed it for a day and a half. What if I miss feeding for a day and a half? Should I put it in the fridge or just let it sit out while I am away? Also, where I am in the world, it's not as easy to find white flour. Surprisingly, it is easiest to find wheat flour. I'm going on 5 days not and the starter seems to be doing well. It's bubbling everyday I feed it, but will it be okay if I switch to a wheat flour now? Also, I am a fan of wheat flour vs. white flour for my food, so I'd rather use a wheat flour, if I'm able to.
