Elizabeth, it sounds like you have a very happy, very speedy starter! If it smells good and is doubling in volume, you're in good shape. You'll just want to take into account that your starter is "ripe" and ready to use three hours after feeding instead of the 6 to 8 hours that is common in starters that take longer to grow. Regarding the float test, we've found that it's not an accurate measure of whether your starter is ready. (You can read more about this here: The float test for yeast dough and sourdough starter.) If you're using your doubled starter when it's at its peak, you should be ready to bake!
