Hi Elizabeth! If you have a scale, we'd definitely recommend using it, especially for the flour. Flour packs itself down so a cup of flour can easily wind up weighing 6 oz which is an additional 1/2 cup of flour and would create a pretty dry, dense starter. The scale makes it accurate and consistent every time, plus, you don't have to wash a measuring cup!
