I always like to keep enough starter around so that I can easily feed what's left in my starter jar, instead of pouring out all of the starter, feeding up more than the recipe calls for, and then putting the extra back into the jar. I just don't like an empty starter jar - it makes me nervous, LOL! Is there any reason not to manage my sourdough starter this way?
