I used these instructions eight days ago on a Sunday. By Saturday, I had four loaves of Chad's Tartine Country bread coming out of the oven. They were beautiful and delicious. I have trusted your company for years. But this takes my loyalty to a whole new level. One thing I did was take my flour container, scale and water into the garden and fed my starter on my patio table. That had to have made a difference because even my discard is outgrowing the container I have it in in the fridge. Several people in the sourdough group I am in on FB discouraged me from making a loaf with a newborn starter. But I trusted my instincts and I am glad I did. Thanks KAF!
