Just wanted to make a comment regarding most municipal water supplies and chlorination. Free chlorine will evaporate from water either by sitting at room temperature overnight or by boiling. However, many water treatment facilities are now using chloramine, which does not evaporate easily like chlorine. To remove chloramine, it has to be filtered out with a carbon filter or broken down chemically using potassium metabisulfite. From my experience brewing beer, fermentation in the presence of chloramine results in the formation of chlorophenols which have a strong medicinal taste. Most municipalities will publish water quality tests for both free chlorine, and chloramine. If your water is treated with chloramine its best to use a carbon filter to remove it. Sitting on the counter overnight or boiling will not significantly reduce the chloramine.
