It sounds like your starter is coming along nicely, so we encourage you to keep up with your feeding schedule. We do have a number of sourdough recipes that turn out successfully using either fed or undef starter, like Merlin's Magic Sourdough Bread. If you're hesitant about the strength of your starter, this might be a good place to start. Keep up with the feeding and the baking and your starter should gain strength with time. Good luck! Kye@KAF
