Hi Gayle, all great questions! You'll want to put the water tray in your proofer and leave the starter uncovered; just be sure the proofer is on the "humid" setting. Set the proofer to 70-72 degrees F. Higher temperature will increase the rate of fermentation, so if you're not seeing much activity you can bump it up a few degrees (no warmer than 75-80 degrees F for best results). Happy baking!
