I was wondering about feeding your starter after the initial beginning week. If I store it in the fridge, I only need to feed it when I remove all but 4 oz for baking? Just to build its volume back? And when I feed it I take it out of the fridge and leave it out for 12 hours at room temp? Or feed it in the fridge? Also, let's say the power goes out for 2 days.. would you want to feed it during that time to keep it busy or just leave it alone? In this case if it was at room temp for two days without being fed, would it over-ferment and change the starter too much? Thank you so much!!
