Hi, how do I know exactly when to switch from 12 to 24 hours? My starter has been active for 4 days and I've been feeding it once every 24 hours, stirring after 12. It has some bubbles and rises about 10-15% after 12 hours. It doesn't appear to fall within this time. I have been stirring it at the 12 hour mark and it rises another 10-15% by the next 12 hour mark. It also now a little hooch on top by the end of the 24 hours. Should I switch to 12 hour feedings now? It's only 67F in my kitchen now and I'm afraid it's not active enough so I would just be diluting it and may kill it if I feed it too often. What should I do?
