Joe, you can actually use any amount you want; the more you use, the more sourdough effect you'll get. I make a sourdough bread recipe that uses 2 1/2 cups of flour and 1 cup starter, and that seems to work well. I hesitate to give you specific amounts here, as six loaves of bread to one person is 4 loaves or 8 loaves to others, since it all depends on the shape/size of the loaf. Just keep in mind that when you use starter in a recipe, 1 cup starter replaces 1 cup flour and 1/2 cup water, so amend your remaining ingredients to take that into account. Good luck — PJH
