Good question. Each time you feed your starter, remove all but 4 ounces of starter (which means you're removing about 8 ounces); and feed that 4 ounces with 4 ounces each water and flour. So yes, you'll always have 12 ounces in your jar, but no more than that since you always feed just 4 ounces. Make sense? PJH
