Hi again! The starter is definitely rising but not that fast to consider it to be ready (doubles in 6-8hours). It doubles in like 12 hours after feeding now which I find great. Yesterday it even doubled in below 12 hours. I just don't get it why it is behaving like that. I mean, I'm expecting to see it grows faster each day right? Sometimes it faster, sometimes it slower. And even with my starter rising, it doesn't show lots of bubbles on the surface as well as on the side of the container. It has bubbles, yes, but not as much as pictured in the blog post. The question is at what point should i consider my starter to be ready? Considering that it does not behave normally and regularly. Thanks!
