Thanks for sharing your kind words with us. We're so glad to hear you have been inspired by our Facebook page to get baking! Sourdough baking is a world all of its own; it's adventurous, exciting, and always a bit of an experiment. It's hard for us to predict what the flavor profile of your starter will be — part of the beauty is that each starter is unique. There are certainly tips and tricks you can try to make your starter more sour, but we've found that treating the actual dough with more attention and care (for example, letting the shaped loaves rest in the fridge overnight) can help build up sourness and add a pleasant flavor. Our best advice is to dive in and give it a go; see what you get from your initial starter and then reach back out to us if you'd like to achieve something different. Good luck and happy baking!
