I've been growing my start for close to 3 weeks! I think it's pretty happy, lots of bubbles and rising significantly (from 1.5 cups to 2.5 cups) but it's not quite doubling and it doesn't smell sour. It has a *faint* sour smell but mostly just smells like bread.
Is my starter ready? I am feeding my starter every 12 hours 1/2 cup whole wheat and 1/2 cup AP flour plus just over 1/2 cup water. I am also keeping it in the oven with the light off (light on was too hot I think) so it's probably around 70 degrees.
