Good question, Trista. We recommend storing your starter in something that is NOT airtight, so that there is room for the transfer of gases that will occur. Any non-reactive container - glass, crockery, stainless steel, or food-grade plastic - covered with saran wrap or a loose fitting lid will work. Hope this helps! Mollie@KAF
