Hi Kristina, even if you've been feeding it consistently for a week, you're still going to want to feed it before baking with it if it's been more than 10-12 hours. The fed starter is strongest about 4-8 hours after feeding it, so it will be the most beneficial in your recipes. If you store the starter in the fridge, you only have to take it out to discard and feed once a week, even if you're not baking with it. Take it from the fridge, discard and feed and if you're not baking with it, let it "eat" at room temp for about 2 hours, then you can always stick it back in the fridge. If you're going to bake, let it "eat" for at least four hours before using it in a recipe. Bryanna@KAF
