Hi KAF bakers! I am going to start my own starter tonight and I was just wondering about the "last feeding" then having to wait 6-8 hours before baking with it. "Once the starter is ready, give it one last feeding. Pour off all but 4 ounces. Feed as usual. Let the starter rest at room temperature for 6 to 8 hours; it should be active, with bubbles breaking the surface." Is this really necessary, if say I've been feeding it for a week and then I decide to use it for a recipe but the last feeding was say 10 hours earlier, can I just use the 8oz for the recipe and store the rest? Once I store the 4 oz in the fridge after I take out the 8oz for the recipe, how often do I have to feed it? Is it only when I want to bake something with it, then I would take it out of the fridge, bring to room temperature .. then what? thanks!
