Even after carefully reading all of your sourdough instructions and lore, I think I've still made a mistake when trying to start my own. I'm on day 6, and while my starter has lots of fine bubbles 12 hours after feeding, it hasn't risen much and is quite thin. I think I've been adding too much water. I've been carefully weighing out 4 oz of unbleached white flour, and then measuring 4 oz of water in my liquid measuring cup. But, I just realized I'm supposed to be *weighing* 4 oz of water on the scale, not measuring 4 oz in the measuring cup (which weighs a bit over 4 oz). Is this correct? If so, should I just start feeding my starter with the proper proportions of flour and water from now on, or is my hydration ratio all off and I'll need to start over? Can this starter be saved?!
