Ashley, our paths cross again! :) I think I have reassured you in three separate places on our website, but let's share what we talked about with the blog community! Sourdough starters are more resilient than most people think; while they can be temperamental in the early stages, it is important to keep in mind that there is a multitude of ways to care and maintain a starter. This is simply the method we've found that works the best for us, so do you starter a favor and try your best to stick to the feeding schedule as described, but don't lose any sleep if you miss a feeding by a few hours. Get back on track with the recipe with a feed and keep your fingers crossed. We think it will be just fine. :) Happy baking! Kye@KAF
