Some of our sourdough recipes call for the addition of commercial yeast to ensure a high rise and pleasant texture, while the sourdough starter adds a tangy flavor. We do have recipes, like our Extra-Tangy Sourdough Bread, that only use the starter to make the bread rise. These do take more time and require a healthy, vigorous starter, so you may want to feed your starter 2x a day for at least 1 day before baking. (I may have just finished watching Cooked as well, so I understand your desire for properly fermented bread!). You may also find some helpful tips in our Sourdough Baking Guide.
