I've started a starter. I'm on day two now and used KA whole wheat to start. It grew a pretty healthy amount in the first day and bubbled quite a bit. I've added KA bread flour for the second day... and it totally exploded over night! It's > 16 oz (I only have a pyrex 2 cup liquid measuring cup to do this in) already and I only mixed in the bread flour 12 hours ago! Is this OK? Does bread flour have too much protein? Or will it be alright? Starting tonight I will be switching to 12 hour feedings with the KA bread flour. Also do you have a good way to know if the smell is right? I'm not sure :) Also, my apartment is not warm, probably on the cool side. I live in Northern CA. Thanks!
