Robin, you can help recreate that sour flavor by leaving it in the fridge for a couple of weeks. You can also get sour loaves by shaping your loaf and then letting it rise in the fridge overnight. Citric acid, or sour salt, is also an ingredient you add to recipes to help enhance that sour flavor you're seeking. Bryanna@KAF
