Definitely allow air to circulate. Plastic wrap is perfect or a lid that is not on tightly. Please contact our Customer Service Team (1-800-827-6836). We can get you in touch with the Flour Operations Team. They will be able to help you with such large quantities! But, if you are new to baking, sourdough starters and are wanting to begin a business (whew!), I suggest speak with other professional bakers and/or take a class. Elisabeth@KAF
