For those afraid to use lye, don't be. I've been making pretzels with a lye bath for years. Just do a search for "food grade lye" and you'll find many vendors (mostly advertising it for handmade soaps). Simmer the pretzels in 2 quarts of water with 2 Tbs lye for about 30 seconds each (don't use an aluminum pot as this can react with the lye), drain then place on the baking sheet with a silicone baking mat or parchment paper. Sprinkle with real pretzel salt and bake for about 8-10 minutes. You'll be amazed how dark the exteriors get while the inside stays moist and white, and they will have the real pretzel taste (no butter needed at all). Enjoy---
