Brilliant suggestions, thank you! I never thought to drain the puree. Now I look forward to cooking my pumpkins. Tip on pumpkin seeds that revolutionized them, for me: simmer them in salt water for 10 minutes or so, then drain and bake. They are much crispier, and yet easier to chew (think of a cracker vs. jerky), and the salt permeates in a delicious and not overpowering way.
