Hi there, Peggy! The apple ring that goes in the center of the cake should have the skin left on. This is truly a matter of baker's choice though, you could take the skin off if'd you'd like!. The Boiled Cider called for in this recipe is a product we have available for sale on our website, but we also have a blog article about how to make your own at home!
