I made the pie today with a gluten-free crust (my own crust recipe). It worked great and definitely baked through. I would just watch out if using a pre-made GF flour blend as the thickener; if it contains xanthan gum, it might over-thicken it. I used my homemade blend with no xanthan gum 1-for-1 in the filling and the crumble, and it worked great. Thank you for the great recipe! My 5-year-old asked for the pie for her birthday and she was thrilled with it.
