I've been making apple pie in a paper bag for decades now. My family always says it's way better than other pies. If I'm in a hurry I use a defrosted frozen pie shell and prick the bottom before filling it.
Also, you can put a thin layer of graham cracker crumbs in the shell before you fill. I think it helps get the bottom of the crust flaky too. Use the grocery bags from Jewel and all my kids are still alive!
